
For those who love creamy coffee, bake recipes for espresso crème brulee are sure to be an instant favorite. Crème brulee is a simple baked egg custard with a crisp burnt sugar top. It is easy to make, with the secret being to bake it in a bain marie – a French term for a water bath.
Baking certain dishes in a bain marie gives them added insulation, ensuring that they bake through gently and evenly. You don't need any special equipment to make this dish, because a bain marie can be made very simply using a 9" x 13" roasting pan. If you don't want to torch or broil the sugared top, you can omit this step and you will have a different dessert, called a pot de crème.
