
As this week marks the beginning of Lent, there are many people who will be abstaining from meat and dairy products until Easter. Hearty vegan dishes make a great alternative for these folks, and there are some especially flavorful Lenten bake recipes form the Mediterranean, that are inspired by Middle Eastern and North African flavors as well.
Baked beans with mint, peppers and tomatoes is one of these excellent recipes that requires a long, slow and gentle cooking, resulting in a thick sweet sauce and very soft beans. All you need is 1 pound of borlotti or pinto beans, rinsed, and picked over, then soaked in 2 quarts of water for six hours or overnight. You add to this 1 dried or fresh hot red chile pepper and salt to taste.
